Try this cleansing salad recipe to help you prepare for the family and feasts of Thanksgiving. Feel free to eat generous portions of green vegetables to your desired portions.
FRESH AVOCADO SALAD
6 medium white/portabella mushrooms (sliced)
Cubed half of avocado
FRESH SALAD VINAGRETTE
3 tablespoons of olive oil or coconut oil
1 1/2 tablespoons of apple cider vinegar
2 tablespoons of unsweetened applesauce
leaves of 3 sprigs of Spanish Thyme
1 teaspoon of finely chopped/pressed fresh ginger
Prepare Vinaigrette ~ Blend together wet ingredients of vinaigrette briskly in a small, separate bowl. Add ginger to vinagrette, blend and allow to sit for at least 15 minutes before adding to salad.
Prepare Salad ~ Slice green vegetables into 1/4 inch strips in a bowl. Pour vinagrette over salad and toss lightly. Add mushrooms and toss. Lay cubes of avocado on top.
